    One month out.

The AI on Costa Maya didn't pan out, it was fully booked and even the the wait list was closed.

I found another "beach club" Tropicante, while not an AI, has good recommendations in regards to food and drinks.  The prices seem reasonable.  I have reached out to them and have two loungers reserved at no cost with the understanding you buy some food and drink while there.  They have been very responsive and no out of pocket expense, so if seaweed is still an issue, we may just show up by taxi, have a drink or two, and be on our way.

For Cozumel, we will just do some shopping at Los Cinco Soles, and I will imbibe on some local beverages

I remembered when we went to Costa Maya and walked through the port area for the excursion, a pool with bar and shops.  I have been doing some research and found an all inclusive a short distance from the port that offers day passes.  Unfortunately there has been an outbreak of seaweed, affecting much of the Mexican coast along with some beaches in Florida.

I live in Florida and small amounts of seaweed is to be expected, however some of the photos and reports I have seen/read gives me pause.  Large amounts can be smelly etc.

The good news is that I have checked which ships will be in port.  For Costa Maya we are the only one, and for Cozumel there is only a Carnival ship, so the crowds should be manageable, if not almost non-existent.

I'd never been to Costa Maya before but was there in March.  They have really done up the port area.  It's huge with shopping/restaurants and swimming pools.  And a Dolphin exhibit.
