This will be our first West Coast cruise, and really hope things are as normal as possible by then. Spending a week in OC prior to departure, scratching my SoCal itch which has never really gone away after moving there as a 20yo from Ohio and left WAY too soon.

Hi everyone - I just booked this cruise for my daughter (13) and I.

Can't wait to explore the new ship and ports.

DW and I just booked with our kiddos.  We just got back from this itinerary last week and had another family express interest in joining, so we're going again :)

Panorama is a nice ship.  Fairly big.

Only complaint was that the elevators did take a while regardless of time of day.  It feels like the elevator programming needs more optimization work to improve the wait times, but overall the food and experience were great.

1)What is the best transportation from LAX to the port in Long Beach?

This page has some good suggestions: https://www.cruisecritic.com/articles.cfm?ID=2460

    Lyft/Uber is a common suggestion.

Shared shuttles are also often suggested, but SuperShuttle recently went out of business (closed most US operations on 12/31/2019).

If you're flying in the day of the cruise, Carnival offers an airport transfer shuttle (I don't recall the cost, but I want to say it's about $30 / pp if you're flying into/out of LAX).

2)what shore excursions did you find to be the best?

This really depends on what you're interested in doing.  There a few pages on Cruise Critic which have some reviews/suggestions:

    1. Cabo San Lucas: https://www.cruisecritic.com/memberreviews/shore-excursions/port/57/
    2. Mazatlan: https://www.cruisecritic.com/memberreviews/shore-excursions/port/58/
    3. Puerto Vallarta: https://www.cruisecritic.com/memberreviews/shore-excursions/port/56/

Trip Advisor has some as well:

    1. Cabo: https://www.tripadvisor.com/Tourism-g152515-Cabo_San_Lucas_Los_Cabos_Baja_California-Vacations.html
    2. Mazatlan: https://www.tripadvisor.com/Tourism-g150792-Mazatlan_Pacific_Coast-Vacations.html
    3. Puerto Vallarta: https://www.tripadvisor.com/Tourism-g150793-Puerto_Vallarta-Vacations.html

As for my family, we have really young kids (<8 years old) and so we can't do some of the things we would like to do (Wave Runner, Horseback riding, Zip lining etc.)  so we generally stick to beaches and other water activities which are more kid friendly.

    3) Is it better to go thru Carnival for excursions or do you know of other companies to do excursions with that would be cheaper than Carnival?

Booking independently from Carnival is generally (almost always) cheaper and is generally just as good.  It does require more research (not a whole lot), but the savings can be significant (50% cheaper or more in some instances).

The one benefit of going through Carnival is the convenience factor, but there's a premium price attached to that convenience.  An example of the convenience (besides not having to do as much research) is that if the cruise misses a port due to weather or some other reason, you'll automatically get refunded.  Booking independently may / may not result in a refund.  It depends on the terms and conditions of where you book etc.

We drive in so i cant help on the transportation. With that many people you might want to try one of the van services i think Prime Time Shuttle is still there but I know there was talk of Super Shuttle shutting down a couple of months ago.

As far as shore excursions I prefer doing them on my own all of the ports are close to town so you can do them on your own and they are a quick taxi ride away. Both PV and Mazatlan have all inclusive resorts close to port. They are pretty cheap $40 or $50 per adult per day up to 100 depending on how fancy want to get. In Cabo, Mendano  Beach is also right by the port. It has a bunch of beach bars and restaurants that will let you use their chairs/ restrooms etc. as long you are buying stuff.

Hope this helps let me know if you have any other questions.
