We took three 'shore excursions' through Princess (as well as one we organised independently). While these were pretty pricey they were also of a good quality. The highlight was a day spent at "South Sea Island" - very relaxing and pleasant (and not crowded!).
I used the gym a fair bit (to try and at least partly compensate for all that food!) and never had trouble getting on the equipment (actually it was one of the least crowded parts of the ship).
While the basic cost of the cruise itself is pretty reasonable - there's a lot of attempted 'upselling' which can get a bit tiring, though I understand it's all part of the cruise line's business model.
Overall, it's more 'mass market' than 'upmarket' experience but priced accordingly.
