We just returned from a 7-night Caribbean cruise (January 8-15th, 2017) that departed Orlando and went to Nassau, St.Thomas and St.Maarten.

We have cruised many times, and were originally concerned about being on a mega-ship just due to the large number of people etc.... but only found a few occasions where it actually seemed crowded.

Overall the food was absolutely excellent, but please note that we never ate in the Windjammer, only ate in the main dining room 3 x's and paid extra for specialty dinners the rest of trip. Chops Grill - outstanding. Giovanni's - terrific. Chef's Table with wine pairing (a must do and very well worth the +$95 per person), Central Park 150 (we did the wine pairing also and was NOT worth the +$115 per person. Better to just do the +$45 3 course). Sabour was also great for lunch and we loved Vintages! Great tapas and lunch, plus did one of the wine tasting events. As said, we paid a lot of extras and also had pre-booked all these dinner reservations online beforehand.
