We chose Celebrity Xpedition because of their reputation and experience in the Galapagos. Everything was first-rate (staff, organization, activities, briefings, cabins, etc.) as described by other reviewers of this cruise. Quito city tours before and after the cruise were very worthwhile. When we booked with Celebrity 11 months prior to cruising, we were assured that following a vegan diet would not be a problem on board ship. There were 7 vegans total on this sailing, and it DID seem to be a problem. We didn't starve, but it seemed the chef/kitchen staff had no experience or knowledge with vegan cooking. Breakfasts and lunches, served buffet style provided varied and plentiful choices. Whereas dinners, ordered from choices on a menu, resulted on one occasion, our eating a plate of plain, steamed vegetables. We all took it in stride, were happy we didn't gain weight on the cruise, but hope that all cruise lines will become better in accommodating out-of-the-norm diets that are gaining in popularity.
