I would strongly recommend Viking Cruises. They are a first class organization from the Stewards to the Bridge Officers. I have a fused polio ankle. My husband has occasional balance/ walking issues. We chose this itinerary because Viking has an included level 1 excursion included at each stop. This means few steps, fairly even walkways, handrails, not too many cobbles.
