Hub and I booked a balcony cabin rather last-minute -- back surgery on his part necessitated us letting go a steal of a deal on Empress of the Seas and rebooking a different trip. My wife and I chose this cruise because of a special promotion and it being a Panama Canal cruise. The ship itself was well maintained and the overall service was good, at best. The Captain and the crew were quite visible during the cruise and friendly. We have always wanted to see the Panama Canal, and this cruise checked all the boxes. We embarked the ship at Fort Lauderdale, the process was quick and efficient. The food was worse than you could imagine -- think truckstop, then go three grades lower.
The problem is the sourcing of their ingredients -- EVERYTHING loaded up for an 11 day cruise in Ft Lauderdale and frozen or refrigerated, and NOTHING brought in fresh from ports visited, as I've seen on many cruises. We like cruising and had the opportunity this year to cruise over Christmas - looking for R&R, we chose the Panama Canal cruise which had a number of sea days.
Staff were always pleasant but it was 50/50 as to whether a request would yield a positive result - perhaps a language problem but it felt more like a management decision to not give staff any discretion in dealing with guests.

We were able to board fairly early - around noon, I believe, and probably could have boarded sooner, had we been able to arrive earlier.
