We did Stingray City with Moby Dicks outfit which was amazing. Our boat was small and only around 20 people on it or so. Guides were great. They took us to a reef also and we watched one of the guides feed and eel. Then they dropped us on 7 mile beach if we wished...which we did!
I havent been to Cozumel for years and it has grown too much for my taste. I would recommend making this a beach day. San Miguel was just to big and commercialized for me.
In Belize we did the cavetubing with cavetubing.com. I was a little hesitant since I read some disconcerting info on this website but my fears were laid to rest with this outfit. They are extremely professional and I felt cared about and safe the entire time. We got to try some cashew wine on the bus ride out there. We ate the $5.00 lunch and drank a local beer. It was delish and hit the spot.
In Roatan we negociated $15pp roundtrip for a taxi to West Bay Beach which was gorgeous. Go to the end of the beach by the big coral heads sticking out of the water for some good snorkeling right off the beach and less cruise ship crowds. I put deet on my legs but forgot about other parts of my body and got some nasty sand flea bites on my back and arms. What they say in these reports is true. Take heed. The people here are really nice and there never was a prettier port than when I got up and went out on my balcony to look upon Coxen Hole.....paradise!
