Was happy to find getting to Cabbage Beach by taking the taxi to Atlantis was quick and easy. Plenty of food/beverage options at Atlantis and then a short walk over to the beach which you can access from the road/sidewalk next to the Riu Hotel Resort.
Falmouth and Jamaica seemed like a bigger deal to get to a beach if that's the plan. I'm sure the falls and other areas are great if you want to check them out. I just can't imagine going there when just about every excursion is heading to that same spot.
Expensive, but a very unique experience that has ziplining, underground swimming and rafting, plus the option to drive around some buggy/tractors through water and caves. Food, snacks and beverages were all included. You get a locker and key to store your bags. There's outdoor showers to rinse off and change if you want before you head back to the ship.
