Just got home (middle Florida) from 7 days of fun and sun... to St. Thomas, San Juan, and Grand Turk. Weather was awesome throughout - we didn't even experience rain in the El Yonque rainforest -- only a few sprinkles the second day at sea.. and that's all - many sunburns for the inexperienced.. (especially at Grand Turk beach... - watch out for that coral sand sun reflection...)
Liberty's recent upgrades (FunShip 2.0) are entertaining and provide some additional dining options. Guy's Burgers are great, Blue Iguana fish tacos are a bonus (though the taco/burrito bar isn't open as long as Guy's - it should be) and the Mongolian Wok is also good (though they should have rice if they want to compete with other Mongolian grills).
Red Frog Bar Rules with its Thirsty Frog Beer... either the Blue Iguana should come up with an original draft.. or give it up to the taco bar... otherwise - they had nothing special that the Red Frog didn't.
It's been a while since we cruised... but the 24 hour pizza bar has great calzones... (ask for extra marinara sauce --otherwise it is served dry...but still tastes great).
We never ate in the dining room on this cruise... but did eat at Harry's Steakhouse... it's worth the extra $30/person for a one night special dining event...
Emile's Lido was okay... (again - it's been some years since we cruised) but the menu was somewhat routine... Though they always had carved ham, turkey, or prime-rib... but who serves prime rib without horseradish? LOL...
Overall - I rate the Liberty Eastern Caribbean cruise very high.
A note about those who think they are overcharged on shore-excursions... sure - you can do it on your own. But what happens if you are injured, or delayed returning to the Liberty? You are protected from these potential hazards if you are on a Carnival sponsored excursion :) Carnival and the shore-excursion providers share financial responsibility... all part of your original bill. Get that kind of service at Club-Med? haha.
