We did not use Carnival's pre-set excursions and saved a ton of money as well as did things they don't have a shore excursion for.  We just got off the boat, found a water taxi told them where we wanted to go and that we wanted to snorkel - and we were off - $20PP - up close tour of Los Archos and all the related sights there, then to the beach, with snorkeling gear at Pelican Rock.  I can say this - it was AWESOME and the fear I had of the people there selling these packages was completely unwarranted - they were really great and seemed to appreciate the business.  The second day we took our 2 & 7 year old daughters, got another water taxi and went to a beach to jet ski - we got the jet ski for an hour along with the transportation for $75.00.  This seemed like a great deal and the guys out there on the end of Medano beach were cool as hell - even gave my baby some cookies!

Cabo San Lucas

Wish we had more time here - it's really a shame to come all that way and only have a day.  For this one we actually booked the beginner scuba diving lessons - and it was very very good.  Great instructor (Hugo) and Las Caletas.  I am sure there are a lot of great places, but for $120PP we took a great boat tour, lots of entertainment on board (you'll laugh your ass off), then dove, then ate a decent lunch, then finally drank as much alcohol as we could consume.  This was sucha  great day and such a  beautiful place!  You really can't go wrong here...

Puerto Vallarta

Here are my critiques:

Initially the food seems great, but after eating the same thing for 7 days - it gets very old.My kids were not very excited about Camp Carnival and didn't want to go anymore towards the end.
