Cayman is a tender port; there was no real problem with getting off the ship and onto the island quickly, though. Honestly, aside from being British (it's a drive-on-the-left island, and they use British spelling), it reminds me a lot of Florida. So I wouldn't go back there for the island itself. 
The diving, on the other hand, I'll return for. 
We booked a stingray city tour through Moby Dick Tours, and they were kind enough to put us on their early boat, even though we were booked onto the later one (my wife was worried about missing the tender). They even offered to get us onto one of their competitors' tours around the same time, if we didn't want to be near the last tender time -- great customer service! 
Stingray city was great; we got there before almost any other tours, including the Carnival excursions, so we had our pick of the stingrays for petting, feeding, and of course kissing for good luck! I really felt bad for the folks booked through the cruise line; their boats seemed crowded (we had ~30 people on ours. They had ~60 on theirs), and from what our dinner-mates -- who booked through the cruise line -- said, there was little interaction with the rays. 
After a little snorkeling, Moby Dick's bus dropped folks off wherever they wanted along the way. Some folks got off at 7-mile beach, while we opted to stop at a restaurant/bar for a Caybrew and an Ironshore Bock. Refreshing! 
A quick walk back to the port area, a photo of my wife and Big Black Dick, and some duty-free liquor shopping later, and we got onto the tender back to the ship. 


Grand Cayman (Georgetown)

In Cozumel, we didn't have a plan per se -- my main objective was to get a massage on the beach, and have a margarita or two. 
So we went to the taxi stand and picked an all-inclusive to go to. Playa Uvas was closest, and what the man at the Hertz counter recommended (he seemed genuinely surprised when I said "I'd rather take a taxi than rent a car; I'll be drinking."), so that's where we went. It's a $10 taxi from Puerta Maya, about a 10-minute drive. 
$24 a person got us a beach chair, umbrella, table, snorkeling gear, and a 3-hour open bar. The snorkeling was good, although I think next time we'll opt for either the guided tour (they saw better stuff than I did when I went off on my own; more fish, and even some lobsters!), or the resort SCUBA off the beach. 
Kiko kept the drinks coming during our open bar; there were many margaritas, some Sol beer, and some tequila. We also purchased some chips, guacamole, and nachos a la carte (you could opt for a $34 package that includes lunch, but that seemed wasteful as we were just off of a giant floating buffet!). Good value for your dollar; we're fans of Playa Uvas! 
They also have some massage rooms, but we opted to go back to Puerta Maya for that; there's a massage tent set up right on the water. For $25 each for a half-hour, my wife and I got our muscles stretched and rubbed; it was blissful. Definitely something I recommend! 


Cozumel

Here, we booked a tour through Victor Bodden; two of our dinner companions decided to join us -- they were tired of the cost of Carnival's excursions, and seemed excited by the prospect of going to Monkey Business. Our driver was knowledgeable and proud of his island home, and was happy to show us everything from the incredible scenery to the rich homes... to the poorer sides of the island. It was eye-opening; we're not rich people, but we felt quite wealthy in comparison. However, we never felt uncomfortable, even in the "bad" part of town (where we stopped to buy a soda at a local tienda). 
Monkey Business was a blast -- we had a great time feeding the white-faced capuchins, playing with them, and taking photos. I highly recommend it if you're an animal lover. We also got to see and interact with various other animals -- some parrots and toucans, deer, and such. It was the highlight of the trip to Roatan. 
We then had a little lunch at a seaside bar -- and a Salva Vida (hey, you've gotta try a beer in every port, right?). My wife wasn't feeling well, but they were happy to whip up some plain rice for her. Me, I had conch in garlic and cream sauce. Sitting on a bay in a tropical island, having a beer and conch for lunch, what could be better? 


Roatan

In Belize, we had a reservation to go cave tubing with cave-tubing.com. Tendering out was a pain -- we were far away from shore, and Carnival's excursions got priority treatment for tenders (probably the one thing that I disliked the most about the cruise line, in fact -- even more than the photographers!), but we got to the bus quickly enough. The tour guides were funny and informative, both about the city and culture of Belize. Alas, the city made me long for the relative safety of when I was a college student, living in inner city Houston. Yes, it's pretty scary; the poverty is pretty desperate there, and it shows. 
Cave tubing was a blast; we drove through a little Mayan village on the way to Jaguar Paw caves, where we hiked for about 20 minutes through the jungle. Onto the tubes, lashed together, and we were off! The main cave that we went through was fairly long -- probably the better part of a mile -- and again, our guides were excellent, pointing out interesting features of the cave ("see that log wedged into the roof? That's how high the water can get when it floods."). After we finished tubing, it was back onto the bus to their palapa for lunch and a Belikan ("the only beer worth drinking!"). Stew chicken, rice, and coleslaw -- a filling Belizan meal. 
If there were one port that we could have skipped during our cruise, I'd have picked Belize City. It's not that we didn't enjoy our excursion, but that Belize City itself is pretty dismal. My wife wanted to go to a little straw market just outside the gates of the tourism village, where we were completely surrounded by people begging, trying to shove wood carvings into our hands, offering to braid my wife's hair... it made us quite uncomfortable, so we beat a hasty retreat to the safety of the tourism village. If there were some way to get to the countryside of Belize without having to deal with Belize City, I'd love it... but alas, there isn't. 


Belize City

Slightly obstructed view -- the cabins just forward of this one jut out about an extra 5 feet, so you can't see forward.  Good storage -- 3 closets, 2 with hanging bars and 1 chest-of-drawers closet, 2 nightstands, 3 usable drawers, and a narrow cabinet.  Not much hallway noise, about halfway between 2 sets of elevators.

My wife and I took the time to go up to the Lido for some lunch first; a little Asian cuisine to fill us up.), and we felt it was worth the $30 a person, plus $14 for corkage -- we brought a very nice bottle of wine for the occasion -- I think I'll stick to the main dining room for now; it was faster and we enjoyed the company of our table-mates more.
