This is our second time on the Fantasy, This time with our 2 grandchildren (5, 7) They had the Best time, both stated cruise was better that Walt Disney World and want to do another one!
Typical Disney: well organized off and on, lots of kids' activities, short wait times for dinner, excellent menu choices for kids and adults. Great shows and excellent service.
But our issues: horrible coffee in dining area (every other cruise ship makes decent coffee and I'm not that picky), no bottled water provided for shore excursions, other ships do provide that, noise level in corridors before 7AM and after 10 PM. Flagrant violations of non potty trained children in kids pools; one or both were closed at least one time/day due to "debris" in pool. (once both pools were closed at the same time). Hand washing not enforced in before entering dining rooms -- employees tried but parents and kids just bypassed!

Tortola
We had been to Tortola several time (bareboat sailing in BVI) so we just taxied to Sebastian's (Apple Bay) for lunch and beach time.
We love Tortola for it's laid back, non commercial ways!
St. Thomas
Just spent time walking around the shops and then back to the ship for non-crowded pool and Aqua Duck
Castaway Cay
Really well done, kids Loved it
