Our cabin was very standard.  We had a balcony on deck 10, roughly mid way between midship and the rear.  It was very quiet both day and night.  Balcony was a nice size.

The embarkation process was terrible.  Very long line, and the port itself is nothing to write home about, no surrounding.

Houston

We booked independently through the Dolphinaris website.  It was much cheaper than the cruise line prices and we saw many people from our ship who did the same.  Open bar after the dolphin experience as well as 2 different buffet options for all you can eat.  Great value for our money.  
After this we took a taxi down the highway a bit to Paradise Beach.  Amazing location with a large private beach and very large private pool.  Inexpensive to use as long as we wanted to.  Great location

Cozumel

After the tender nightmare, we met our tour guide very easily by the dock.  We took about an hour and a half ride in a very conformable bus to the caves in the jungle.  Had a great time learning a lot about Belize and the cave system.  Tour included a fantastic traditional Belize lunch afterwards.  
Book through Cavetubing.bz and not through the ship!  we paid $50 per person through their website while the ship was charging $130+ per person.  Cavetubing.bz was definitely the way to go.  Note to the wise.. when the ship says last tender leaves at 5:00pm, that means you really have until about 6:00pm.  We arrived back at the tender dock at 5:00pm on the dot, the line to tender was roughly an hour long so we walked around the port shopping area until the line got shorter.

Again we booked independently through Roatan Ocean Adventures.  Best excursion we have ever taken.  They have multiple different snorkeling excursions to chose from, all very small groups, not like the big boat packed with people that you book through the ship.  We did the snorkel hopping tour which allowed us to snorkel at 3 different locations, each for about 45 minutes and then even had time for a beach break for an hour.  Highly recommended, very great tour.

*****Trick is to take the stairs to the tender deck 4, Not the elevator, you will come to the tender ticket check point at deck 5 staircase, hide your tender tickets, and say you are meeting family in their cabin on deck 4, they will let you pass to go to the next deck down, blend in with everyone else in line.The tender process for Belize and Roatan was a nightmare never experienced before.
