“Top Chef” Tom Colicchio Talks Cruising

Top Chef fans are eagerly awaiting Season 11 of the Bravo reality show, which wraps up filming this week in New Orleans. While new episodes won’t likely air until fall, Cruise Critic Contributor Anthony Cave caught up with co-host Tom Colicchio during Top Chef: The Cruise, held onboard Celebrity Constellation.
Q: What are the challenges of cooking on a cruise ship?
A: “The kitchens here are great, they are spotless, they’re big, they’re fully equipped, there is no issue in the kitchen. The only problem is when you’re a chef and giving someone a recipe [to mass produce], the recipes are just half the battle; it’s really how you’re doing things. I’m always concerned when I do that, once I give it away, you lose control over it. You always worry about that, how fresh it is.”

Q: What do you like and dislike the most about cruising?
A: “Least favorite thing is….I have no contact. That’s about it. On one hand, it’s kind of good; I’ll have some downtime. I have menus to work on, so it’s going to give me some time to work, which is kind of nice. On one hand, we don’t have contact, but the nice thing is we don’t have contact. The neat thing is also the chefs, we don’t really have much contact with them at all during the season, only when we’re eating their food or at the judge’s table, so it’s kind of neat to interact with them again. Just an aside, I’m an MSNBC junkie, and I’ve been in hotels where they don’t have it, and they have it here, so I was like ‘this is great,’ it’s the little things in life, that’s it, just the little things.” (Laughs)
Q: How does a {theme} cruise compare to a traditional cruise?
A: “I think a lot of it is about access. When you can get that, especially in a controlled setting, that’s what people want. You can go cruising, but having access to people that you’re fans of. So I pull up a seat to the coffee bar and I sit down and order coffee and the guy sitting next to me goes ‘Oh, Tom’ and I was like ‘yeah’ and we just had like a half-hour conversation. They’re not having that much fun on that ship right there (Tom pointed on a cruise ship in the distance), I can tell, that ship is not as fun.” (Laughs)

      Combining two of my favorite things–Top Chef and cruising–makes me giddy! I can’t wait to see the TV episodes.
