With two new ships dedicated to the Big Muddy launching this year, it’s apparent that Mississippi River cruising is making a comeback. To get the 411 on what type of dining scene to expect aboard Great American Steamboat Company’s upcoming American Queen, kitchen-savvy Cruise Critic staffer Melissa Paloti traveled to Natchez, Mississippi, to get a lesson in upscale Southern cuisine from Regina Charboneau, the line’s chef de cuisine.
