Recipe: Fruit Sushi in Bacardi Raspberry Coulis





Ingredients
Red grapes
8 pieces sliced strawberries
4 pieces sliced kiwi
1 piece sliced cantaloupe
1 slice pineapple
1/4 lb raspberries
1/4 cup honey
1/4 cup water
.5 oz BACARDIĀ® RAZZ
Flavoured Rum
3 cups milk
1 cup sugar
1 cup rice
3 egg yolks
1/2 cup heavy cream
1/2 tbsp butter
Dessert:
Fruit Sushi in Bacardi Raspberry Coulis

Editor's note: Consider serving this dessert with chopsticks -- the piles of rice pudding will hold together. If you are intimidated by plating the coulis as a design as shown, serve it as a dipping sauce!

1. To make the rice pudding, boil the milk. Add sugar and stir until completely dissolved. Add the rice and continue stirring until cooked.

2. Remove from heat and add egg yolks, heavy cream and butter. Stir well and set aside to cool.

3. Mold cooled pudding into "sushi" shapes on a serving plate. Arrange sliced fruits on top of each pile of rice pudding as shown.

4. To make the coulis: blend together raspberries, honey, water and rum. Present as shown.
